Raw Strawberry Chia-Hemp Breakfast Pudding

This pudding is so creamy and light at the same time. You'd almost think there was dairy in it. My daughter, who is very skeptical about everything I eat, said it made her think of yogurt (without the tang), which was my goal! This pudding is lightly sweet and makes a great breakfast topped with some fresh strawberries. You can easily substitute the strawberries for your favorite fruit. Blueberries would be delicious also! It just so happens that this is strawberry season and they are one of my favorites. Right now the prices for organic are $2.50 per pound which is super cheap! I keep buying them and devouring them!



This pudding is very filling and packed with protein, essential fatty acids and lots of other nutrients. Chia and hemp are both "super foods" for delivering the max amount of nutrients for the least amount of calories. Chia is packed with fiber, calcium, has the perfect balance of the omega fatty acids and antioxidants. Hemp is a perfect protein, has the perfect balance of the omega fatty acids, and provides fiber and vitamin E along with many other trace minerals. I've provided some links to more info on them. Anyway, onto the recipe!


Strawberry Chia-Hemp Pudding:
1/8 cup hemp seeds
1/8 cup chia seeds
1/4 - 1/2 cup almond milk
1 tsp of maple syrup or other sweetener
1 banana
6 strawberries
3 strawberries sliced for the top

Directions:
Put the hemp, chia and almond milk (start with 1/4 cup and add more a little at a time if needed for desired consistency) in the blender and process for 2-3 minutes or until the mixture is really smooth. This is the important part! The longer you let it blend, the smoother the texture! Add the banana,  strawberries and maple syrup and continue to blend until smooth and creamy. Top with sliced strawberries to serve. This makes 2 portions. Below is the pudding made with blueberries instead!
