Oil Free Raspberry Vinaigrette
When making a salad with nuts or other fats, sometimes it's nice to pair it with an oil free dressing. You need healthy fats, they help you absorb the fat soluble vitamins in your veggies, but if you are putting nuts on your salad, then you are getting plenty of fats. You don't have to have any oil in your dressing especially when you can make a delicious oil free dressing.
This is a tangy, sweet dressing that tastes wonderful. Pair it with a strawberry spinach salad with sunflower seeds, or a strawberry arugula salad with walnuts or pecans. It is even great with a romaine salad with cherry tomatoes and sunflower seeds or pumpkin seeds.
Oil Free Raspberry Vinaigrette:
1/2 cup raspberries (fresh or frozen)
3 tbsp balsamic vinegar
1 tbsp pure maple syrup
1/2 lemon juice
1/2 tsp lemon zest
4 tbsp water
sprinkle of sea salt
Directions:
Put everything into at blender (single serve works great!) and run until it is smooth. It will be thick and cling nicely to your salad. This makes enough for about 4 dinner side salads or 2 large, meal sized salads.
